I also felt like baking today and finishing our yummy casserole with something sweet. So, I went with baking a Swedish apple cake.
This is a pretty easy recipe and with minimal ingredients. Its great for when if you have unexpected guests.
Ingredients (serves 6):
- 2 eggs
- 250g caster sugar
- 100g unsalted butter, chopped
- 150ml milk
- 1 tsp vanilla extract
- 175g self-raising flour, sifted
- 4 small Granny Smith apples, peeled, cored, sliced 1cm thick
- Pure (thin) cream or ice cream, to serve
Preheat oven to 180⁰C. grease a 24cm springform pan or loose-bottom tart pan.
Place the eggs in a bowl with 200g of the sugar and use a hand whisk to combine well.
Place the butter, milk and vanilla in a saucepan over medium-low heat and cook, stirring, until butter has melted.
Slowly whisk the milk mixture into the egg mixture, then fold in the flour until combined.
Lay half the apples slices in the base of the pan. Carefully pour in the batter, then arrange the remaining apple slices on top. Sprinkle with the remaining 50g sugar, then bake for 25 minutes or until puffed and golden.
Allow to cool slightly in the pan, then transfer to a platter. Serve warm with cream or ice cream.
